An ambitious restaurant has landed in Chengdu's Tongzilin neighborhood, Parador by Opera. With both a consulting chef from the reputed Mina restaurant in Spain, and a full-time Spanish chef in the kitchen, Parador offers not only the dishes we would expect from a Spanish restaurant, but also a few surprises.
When we at MORE were invited to try their wares, two amuses set the scene: fat, juicy, olives with excellent bread and olive oil, and a fresh piece of caviar-topped red tuna. We dug into a board of Spanish charcuterie including the famous Iberico ham, which appeared to be one of the more popular items on the menu. The chilled salmorejo soup was fragrant with olive oil and came topped with a refreshing granita. The 65-degree egg came served on a bed of tomato and pepper with shreds of fried potato on the side. We appreciated the restraint in this dish, which shows how well-prepared ingredients can be their own best seasoning. A piece of perfectly cooked fried turbot over chick peas and spinach was garnished with bits of ham and nuts. The stewed oxtail over potato cream was melting soft and came with a surprise crunch of sugar on top, reminding us of the sweetness of dishes like hongshao pork. Our cheesecake with biscuit crumbs hiding under strawberry cream and topped with a shard of excellent chocolate convinced us that dessert should not be missed here.
The restaurant has a serious pedigree on both the food and the wine sides, and it shows. Their short but carefully composed wine list lacks the stodginess of most local Euro-centric offerings and has several selections by the glass. Wine classes are also in the works.
Parador is one of those rare restaurants that relaxes and impresses at the same time, and works well as a neighborhood or occasion place. They have private rooms for smaller groups as well. We would be pleased to stop in for a bite and a drink, or enjoy several courses. Lunch and dinner set meals are offered as well as afternoon tea and half-priced wine in the afternoon. Expect to drop a few red bills per person.
